Little Hungarian Bake Shoppe opens
Over the summer, Canton gained a new sweet storefront: Little Hungarian Bake Shoppe, which specializes in both sweet and savory kürtőskalács, or chimney cakes.
The bakery, located at 2110 Fleet St., gets creative with these yeast-based twisted cylinders — blanketing them in a caramelized coat of sugar before coating them in confectionery spreads and sweet toppings, or baking them with savory spices and stuffing them with Hungarian-style sandwich fillings. According to David Korrie, owner of the bakery, and manager Isabella Bruno, chimney cakes get their name from the steam that emits from them after they're taken out of the oven.
When Korrie stumbled across the property while in search of "a project in Baltimore," he said that the storefront "really screamed bakery."
"I'm not a baker, but I did live in Hungary and really enjoyed chimney cakes," he said. "I looked around in various places, and Baltimore seemed to have the most opportunity."
A family of Ukrainian refugees will soon fully operate the bakery and live in an apartment in Korrie's building — an important tenet of the business, said Korrie, who had the idea to begin the project at the beginning of Russia's invasion of Ukraine. While he and Bruno have begun operating the business, the team will hand the bakery over to the family once they arrive in Baltimore.
"Community members are looking for a store like this in the neighborhood — somewhere that offers some coffee and baked goods," Bruno said. "This area is kind of lacking those types of businesses."
